I have an alternative recipe for those who are bored with the classic lettuce and chicken salads; Quinoa and Avocado Salad with Roasted Chickpeas. When you roast these tiny protein balls in the oven, they take on a very good taste. You can even consume it like chips. With quinoa and avocado, our salad becomes extra nutritious and satisfying.
If you’ve boiled your chickpeas and you’re ready, let’s get started right away.
What you need:
Half a cup of quinoa
1.5 cups boiled chickpeas
1 teaspoon olive oil
Salt and pepper to taste
Red pepper powder
Thyme
Half avocado
1 slice of lemon
How to make:
First, we boil our chickpeas. We drain the chickpeas and we put them in a bowl. After adding olive oil and desired amount of salt, black pepper, red pepper and thyme, we mix the ingredients. We roast our chickpeas, which we pour on a baking tray on a baking paper, in the oven for about 16-20 minutes at 200 degrees (400 degrees Fahrenheit).
We boil our quinoa in a small saucepan. Then, we season the boiled quinoa with salt and pepper and put it in a bowl. We add the chickpeas from the oven to the bowl. We serve it with sliced avocado. You can also add a small slice of lemon if you wish.
